Bouncing Jell-O

High-speed, slow-motion video footage of Jell-O cubes bouncing.  I'm mesmerized.  Can some combination of math and science model this?  Not that I'd understand the output if it were possible, but this seems to me like one of those areas where science is insufficient to a task.
